Butternut Squash Soup
This is such an easy soup to make, especially if you have an immersion blender. The hardest part is peeling and de-seeding the butternut squash. After that you’re basically there
INGREDIENTS:
Butternut Squash
Onion
Garlic
Warm Veggie Stock
Salt and Pepper
Optional: a spice like thyme, or rosemary
Peel the squash, and cut it in half the long way. Cut off the ends. Scoop out the seeds with a spoon.
Cut it into cubes
Saute onion, and add the cubed squash. Cook for 10 minutes.
Add garlic, thyme, and warm veggie stock (I always add it WARM//HOT to things at this stage)
Cook everything on medium until the squash is soft. Use a blender (I love a hand blender) to combine ingredients until smooth.
