Butternut Squash Soup

This is such an easy soup to make, especially if you have an immersion blender. The hardest part is peeling and deseeding the butternut squash, but you can always buy it precut. After you combat the squash you’re basically there

Ingredients

Butternut Squash

Onion

Garlic

Vegetable Stock

Salt and Pepper

Optional: a spice like thyme, or rosemary

Prep

Your squash. Peel it, and cut it in half the long way. Cut off the ends. Scoop out the seeds with a spoon and cut it into cubes

Saute onion, and add the cubed squash. Cook for 10 minutes.

Add garlic, thyme, and hot vegetable stock (I always heat it up before adding it to this stage)

Cook everything on medium until the squash is soft. Use a blender (I love a hand blender) to combine ingredients until smooth.
