Buttermilk Cinnamon Buns

Buttermilk Cinnamon Buns

No rise cinnamon buns. Jack made these for me for my first mother’s day when he realized we were out of yeast. I loved them. They were tangy and gooey and came together quickly.

Ingredients

2 cups of flour

1 tbsp baking powder

1/2 tsp baking soda

2 tbsp sugar

1/2 tsp salt

1/4 cup melted butter + 1 tbsp

3/4 cup buttermilk

For the filling

1/4 cup soft butter

1/2 cup brown sugar

2 tbsp cinnamon

pinch of salt

For the icing

1/2 cup cream cheese

3 tbsp softened butter

1 cup powdered sugar

2 tbsp buttermilk or milk

a splash of vanilla

a pinch of salt

Prep

Heat oven to 375 degrees and butter your baking dish

Mix all the dry ingredients together with your hands or a wooden spoon. Don’t overmix

Stir in melted butter and buttermilk until soft

Roll the dough into a rectangle (like 1/4-1/2 inch thick)

Spread with butter, then brown sugar, cinnamon, and salt

Roll up, and cut into 8-10 buns

Pour buttermilk around the buns, a couple splashes

Bake for 25 minutes

Make the icing

whisk together cream cheese, butter, powdered sugar, buttermilk (or milk), a splash of vanilla, pinch of salt
